My wonderful friends Jadah Sellner and Jen Hansard have an amazing book, Simple Green Smoothies and today I’m sharing my favourite recipe with you!

As health coaches, we know that green smoothies can replace almost every meal, but one of the genius ideas from the book is that we can also create healthy cocktails.

My all-time favourite cocktail is a Pina Colada, and whilst I only have these as an occasional treat these days, my eyes lit up when I saw this healthy Simple Colada in the book and Jadah and Jen have generously allowed me to share this recipe with you today!

Simple Colada

 

Simple Colada is a refreshing blend - without the hangover! Kiwi fruit is the most nutrient dense fruit, with plenty of vitamin C, which helps prevent wrinkles and helps promote skin rejuvenation.

  • 2 cups spinach

  • 2 cups unsweetened coconut milk

  • 2 cups chopped pineapple*

  • 2 kiwi fruits halved*

  1. Blend the spinach and coconut until smooth.

  2. Add the pineapple and kiwi fruit and blend again.

*Use at least 1 frozen fruit to make a cold green smoothie.

Tip - want a lighter smoothie? Go for coconut water instead of coconut milk and still get the great tropical flavour!

 

This is really a beautiful book with so many delicious looking recipes.
